Sadly I do not own the Adventurer's Guide yet, but the Sanguine Angel is on the pfsrd now! I've wanted to make a Gray Maiden ever since I first saw them.
Should I stick with the classic fighter or does a particular archetype fit the theme better? I was contemplating Shielded Fighter, but I'm not sure yet.
Also, is the Gray Maiden plate referred to by the Sanguine Angel a new item from the Adventurer's Guide?

Classic gray maidens are in general fighter, sanguine angel in particular are part of the Elite Erinyes company). You wouldn't gain much from shielded fighter if you go into the class at level 6.
Yeah the gray maiden plate is a new armor in the adventurer's guide.
Sword and shield builds tend to work well with regular fighter and top of it since you plan to go into the prestige class, 5 level of fighters is perfectly fine.
Classic fighter also works well here because you need three feats to meet the requirement, most other classes don't get a lot of bonus feats, you could play other classes but your choices of feats before going into the prc would be fairly limited to meet the requirement of the prc.
My impression is that core Fighter with no archetype is the best lead in class to Sanguine Angel. You really open things up if you take the archery ability and I wouldn't necessarily want to restrict myself into the shield full time.
Gray Maiden Plate is in AG and is functionally just named full plate that interacts with certain feats and abilities.

Note that the sanguine angel also stacks with fighter for armor training and weapon training (to varying extents). An archetype that loses either of those would be missing out. And of course, the original Gray Maidens were almost all base fighters.
I'm glad people are liking the Gray Maiden content - that was probably my favorite chapter of Adventurer's Guide to work on. ^_^
