Making a Necrocraft undead creature large?

Hello folks, I have been trying to find the best way to simply make a Large undead creature with 2 attacks and a bite.

I am not sure what kind of stats it should have... I know the base medium creature has a 15 str but how do I figure out what a large one would have? DEX Cha ect...

Find a Half Orc Ranger with claws and the bite racial trait and a permanent enlarge person spell on them?

You can always add the giant template wich gives a +4 bonus to STR and CON, along with a -2 DEX. +3 natural armor, and increased damage dice.

Start from Medium Necrocraft, and apply the Table: Size Changes from the Monster Advancement page.

A Large Necrocraft would have Str 23, Dex 11, Con —, Int —, Wis 10, Cha 13. Not sure for the Cha through, as you may apply the increase in Con instead (so, 17 instead of 13). Its AC would be AC 15, touch 9, flat-footed 15 (-1 size, +6 natural), and so on.
