Our DM says it takes 2 or 3 hours to convert 1/6 of an AP.
FWIW, I do my conversions on the fly. I dont think I would tackle Iron Gods simply because it is so different. The rest I can either find something in the MM that is close enough stat wise or just take the relevant DC/AC value x .75 and call it good enough. Sure there are always exceptions but that works often enough I can keep the game moving.

I found running Shattered Star #1 in 5e easy & smooth; the only major issue was when it was some obscure PF monster with no stats & I had no idea what it was supposed to do. Just going by the listed CR seems easiest way to make sure from-scratch stats work out, but usually I can take something from the MM, eg Reefclaw = giant scorpion with no poison sting; carrion golem = flesh golem.
However running Shards of Sin in 3-hour sessions took us 11 sessions! Running all of Crimson Throne in PF took 34 sessions, the early books were 4 sessions each. Not sure 5e runs any faster than PF.

I feel like the APs are unpredictable when it comes to length of play. I've had books take a variable amount of time. Some of them leave open ended sandbox play while others are tightly curated experiences. I have players that take any loose threads and address them, or try to, so it really changes the time frame from AP to AP.
