In addition, the following spells have a 5% chance per caster level of operating through the sensor: detect chaos, detect evil, detect good, detect law, detect magic, and message.

Is this one roll for the whole scrying spell and if you don't get it you don't get it, or do you roll every time you cast one of those spells?

I read it as "roll every time you cast one of those spells".

As the last two, detect magic and message, are 0th level spells for anyone casting scrying, the option for multiple attempts essentially guarantees success.

I am not sure how to read it for sure, and welcome it if anyone has a guideline that would point to repeated attempts. However, I am inclined to read it as single casting only for each use of scrying.
