I'm looking to build gambit using card caster and staff magus archetypes. But my question is, is there a way to get a bonus to dexterity using the magus arcane pool other then cat's grace. Maybe through feats or another archetype
Mutagen can grant an alchemical bonus that will stack with the enhancement bonus from Cat's Grace. You could dip Alchemist or Mutation Warrior (Fighter). Alternatively you could use the Variant Multiclassing option from Pathfinder Unchained, but it won't kick in until level 11.
Size bonuses from spells like Alter Self or Reduce Person are another option.
I really didn't want to go outside of the magus. But I can really see an option.
You should definitely check out the Kineticist from the upcoming Occult Adventures. Can't really help you with magus though.
You will need to decide what part of Gambit that is important. The staff? The cards? The speed and dex? The charm? The rogue skills? That he can kick Wolverines butt? Because you cannot get it all.

Yeah I'm doing a Gambit inspired build for Giantslayer and its tough. My focus is mostly on the card blasting but at these lower levels I'm still able to mix things up in combat with the staff, but defiantly more of a build for fun and flavor.
Some of the things I'm looking at is Far Shot to try to keep out of the range of the Giant reach with the cards. a lot of items that help with acrobatics to keep him battlefield mobile and able to do cool stuff with the staff. Quick draw combined with the spell Frostbite to get multiple shots all doing the spell damage as I gain more attacks.
Also talk to your GM about being able to put magical effects on your throwing cards cuz that'll certainly help.
But otherwise work on that cajun accent Mon ami.
