Say that I want to summon the ghost of a crafting wizard who would then cast spells and craft magic items for me.
Summon Spirit says that it functions just as if I had cast Greater Planar Ally, so an offering worth 2500 gp is required. However, it also says that I have to pay additionally for the services rendered.
I was looking at the Goods and Services rules and I only saw a few hirelings who would do that, which I'm sure an 18th-level ghost wouldn't be too happy being paid a few gp/day.
Also, do ghosts take gold? What use does a dead guy have with it?
So the questions come: What do you pay a Ghost? What amount should I give it? Would that be the cost of Spellcasting, or something else, since he would be doing the crafting, too?

Not worth it, you would spend too much gold. Planar ally in general aren't very good for crafting purposes. At minimum CL 15 for 8th spell, you are looking at 15 day at most, costing you 18 000 gp or if you manage to convince your dm that the task is non hazardous 9000 gp, without including the material components needed for the spell of 1250 gp.
Remember that crafting goes off the base price, so the ghost will be here for 15 days, making 1000 gp from the base price of the price magic item. So you are looking at a ghost, to craft you at most for 15 days, a 15 000 gp magic item.
You are better off summoning a Mercane(Outsider merchant between the planes) with regular planar ally and just buy magic items from him or at least, he would have contact for people who can the magic items for you. You'll probably just have to pay a finder fee.

Well, the ghost might demand payment other than gold such as some kind of service. They might want gold donated to a temple or descendant. The ghost would also likely require you to provide the components for the magic item in question. Also, the spirit only preforms one task, so you can't just have him follow you around casting spells.
