Several good candidates from Ironfang Invasion.

The middle of Book 4 is a solid romp through the Darklands that could be copy/pasted into another adventure. Infiltration of a wizard's tower in Book 3 that could easily stand alone. The big battle in Book 3 could be tinkered with to put it in another city with another antagonist, but use the mechanics presented in the AP. Any one of the three castle assaults from Book 2 could be cropped out and re-purposed with your own enemies and goals. Lots and lots of little "mini-dungeons" throughout this AP. Various mines, caves, monster lairs, etc. with little mini arcs that wouldn't be too hard to recycle.

As for one entire book from the AP that could stand alone? I'd say Book 4: Siege of Stone. Start by clearing out a morlock warren which transitions to a journey through the Darklands which spits you out in the dwarven city Kraggodan, where you immediately get to work solving an important mystery in the city's ancient treasure vaults. The throughline is the party is retracing the steps of the BBEG of the AP to learn how she stole away with a dangerous, powerful artifact.

Featured enemies and creatures include: morlocks, duergar, darkfolk, trox, gugs, naga, and medusa. Plus a section with plenty of social/RP encounters involving the dwarven city.

Truth be told, my group ran the entirety of Reign of Winter just so that we could make the joke of running Rasputin Must Die as a group of Russians from Golarion who were now finally discovering the motherland their babushka kept telling them about.

It definitely would work really well as a standalone adventure.

As for other suggestions, I'd say The Twilight Child can actually work fairly well if you rework Earl Merkondus to be the big bad trying to take over the city and either gut the Twilight Child plot or make it part of the Earl's schemes.
