When she is CN, Arushalae loses most of her spell like abilities. These are returned to her when she finally becomes CG, with changes. Her Detect Good becomes Detect Evil. Her Energy Drain becomes an inverse variant. But by the rules, she maintains the ability to summon a Babau once a day with a 50% chance. Is this intended? What should her summon be replaced with?

That was not intended.
She should not regain the ability to summon demons. It should not be replaced; that ability simply goes away.
I suppose if you wanted you could allow her to summon an equally powerful azata... but the idea is that some elements of being a demon are simply lost and not replaced.

Because those spells are most often used to detect enemies in play, and as a good creature, she wouldn't be enemies of good creatures. The mere fact that paladins can detect evil gives that enough tradition and weight to be an iconic good-guy power in and of itself.
