Animal Companion's Losing Their Status as "Animal Companion"

Would these creatures lose all the benefits they gained as animal companion and completely revert back to their appropriate bestiary stat block?

Yes, the only mechanical reason they have the ability is the bond. Once that is broken or removed the animal would revert.
