I will be participating in a one-off custom adventure in which one of the primary goals is to do as much damage as possible to a large stone building. It may be guarded, so the destruction will have to take place in a short period of time. We will probably have to infiltrate with a cover story or outright stealth, so a discreet method is preferred (i.e. no siege engines)
What would be some good ways to go about it?
Assume a level 3 character with 3000 gold available.
My best idea so far is to use a scroll of changestaff to summon a treant to wreak havoc, but I am afraid of failing the caster level check.
Are there any other ways to reliably accomplish this goal?

If it's a stone building, check out the Soften Earth and Stone spell, if you have a Druid in the party. Otherwise, the Stone Shape spell is available to various casters.
A Knowledge (Architecture and Engineering) roll ought to tell you how to make the building less structurally sound, quickly.
To do it without magic, you could dig a cavern beneath it, and then pull the supports afterward; building suddenly disappears into the ground.

Well, skill focus and maximize knowledge(engineering), and maybe craft (alchemy) and profession (stonemason).
Then invest in a bunch of alchemical components, ranging from stonechipper salve for softening the base of load-bearing pillars, rusting powder to corrode iron beams used to keep together stones, and fuse grenades, plus maybe some lamp oil and alchemist fire to start a true fire in the building.
Also, a cantrip of acid splash can be useful, as with time you can spam it for hours to drill holes in rock, corrode bars and other similar uses.
I guess with your cost and level constraints this is the most reliable way to take down a building: play it as much as possible as near to real life.

There's the Breaker barbie archetype and the Smasher rage power. The former lets you add 1/2 your barbie level to sunder/object damage and the latter lets you ignore hardness once per rage.
if you go half-Orc you can take the gatecrasher racial trait to add a +2 to sunder/break object checks.

Stone shape on key structural members. Perhaps you could find a partly charged wand of it.
A Druid could call a small earth elemental with summon nature's ally II, which could earth glide into the foundations and wreck them, a wand of. SNA II would cost 4000 gp, but again some scrolls or a partially charged wand might be available.
