I'd offer a suggestion, except for the fact that I don't bake standard chocolate chip because I find them boring. I do dried cherry-chocolate chip-pecan-oatmeal. And I absolutely love them. But a lot of people hate on oatmeal in cookies, which I cannot understand. So more for me.

#1: Baking naked is a dare, not a suggestion.

#2: This is more of a scientific experiment than a quest for a good cookie. My chocolate chip oatmeal cookies are everyone's favorite, so there's no reason to change. However, after buying store-bought cookie dough and declaring it terrible, I have to at least prove to myself that I can do better.

The Ghiradelli fiasco was not better.

About to go home. Good night, everyone.

Personally, I don't generally like oatmeal. Occasionally, if I'm cold enough and there is enough brown sugar I'll have some, but otherwise I'll pass.

OK, I did due diligence, and apparently the general consensus is that baking soda will make chocolate chip cookies, but it's a PITA:

- You have to put the cookies in the oven the moment you're done mixing
- You can't mix too much (probably my mistake, as I use a mixer)
- The dough can't be too cold
- etc.

In short, if you're not ready to make a serious commitment to getting everything right, then baking soda cookies aren't for you.

And now I know...

I do not consider myself a good cook. However, I am good at the few things I do make. I've been told this by the survivors.

Cookies are not one of those things I'm good at. You can ask one of the survivors, if you can find any.

Now, clearly your definition of 'good' and the Examinations Board's are very different. That's a solid A* grade for certain.

Yeah, Whingy was positively offended I never called the handyman he recommended, so don't tell him I'm doing the work on my own and complaining about handyman again. I'll never hear the end of it.

Cookie Fail #2:

I decided to try homemade cookies, so I bought some Ghiradelli chips and make the recipe from their bag.

I was extremely concerned: 2 1/4 cups flour, 1 1/2 cups of sugar, and one teaspoon of baking soda.

For those of you who don't cook, breakfast items such as pancakes and waffles typically use a ratio of 2 teaspoons per cup (so this recipe was already around 1/4 of what I'd expect), and use baking powder. The huge difference? Baking soda requires an acid to release its carbon dioxide, while baking powder only requires enough heat or moisture to liquify the built-in acid.

Someone puts it really well: Baking soda is 3-4x stronger than baking powder, but there must be acid in the recipe. Vanilla? Eggs? Butter? Sugar? Flour? Chocolate chips? Salt? Those are all the rest of the ingredients, and I don't see any acid there.

So yeah, the cookies arose exactly 0% and are flat disks.

The flavor isn't nearly as good as the Nestle recipe, either (though better than the store-bought dough), so Ghiradelli's a loser.

Next trip: Nestle original recipe.

EDIT: Interesting. The article I was reading about baking soda vs. baking powder also mentioned that if you didn't use an acid to neutralize the baking soda, your dish would have a metallic aftertaste. Impus Minor complained that the cookies are "really salty". I think he's tasting that aftertaste.

That is one f@&~ing AWFUL typo.

I made that mistake once a long time ago as a kid in home ec in junior high. It turned me off to baking for a long long time.

That's what irritates me; from my research, you can use baking soda in baking, and the quantity aligns with the amount you'd use, but you have to be incredibly careful to make sure the baking soda activates correctly. Baking powder just works. Baking soda takes extreme care.

Since it was a Ghirardelli recipe, I'm betting on a hoity-toity attitude of, "Oh, if they can't make cookies using baking soda instead of baking powder then they don't deserve our cookies."

My cookie making consists of, "Dump all the ingredients in a mixer. Let it run on high for a couple of minutes. Bake."

It's worked for every cookie recipe I've ever tried. Except this one.

So obviously I'm not a "baking soda quality" baker.

I have no usable advice for baking cookies.

However, anytime I now bake/roast chicken with the skin on, I mix baking powder into the blend of spices I rub on the skin. It supposedly lowers the ph so the skin crisps up better; I can't test for ph, but I have confirmed it does noticeably crisp up the skin better. I tried baking soda (a smaller amount) once when I was basting with lemon juice, but it left a noticeable aftertaste -- not terrible but a little odd.

Baking powder also works well for crisping up oven-roasted potatoes too.

In other fully-clothed news, WW has his second interview for the Awesome Job of Improved Living Conditions +2 tomorrow morning at 11.
They want him to give a seven minute presentation on what he would do in his first hundred days.
So last night he spent over an hour on the phone with his friend's wife who works for the company so she could listen to his draft presentation and offer him suggestions for improvement.

I am trying so hard not to get my hopes up. But this job would change EVERYTHING.
Health insurance and long-postponed dental care.
Rebuilding our savings.
Finally trading in my old car that has electrical problems and has left me stranded more times than I can count.
Not having to worry about whether we can afford to get takeout or go to a movie once in a while.
NOT getting my hopes up.

Oh so very political:
This is a great example of what's wrong with our country's politics today. The TL;DR version is that the front-running Republican candidate already set up a web site detailing the election irregularities in California's recall election... a day before the election even happened!

I'd go off on a lot of things, but I realized many on FaWtL would vehemently disagree with me so I'll just post and fume off.

I pulled a boulder (definitely qualified as a boulder) from the earth because it in the bottom of the hole where I wanted to plant a tree. I also ripped out tree roots as big as my wrists (which are admittedly pretty small) with my bare hands because they were also in my way.

Fortunately I had a new guy and one of the college kids working with me so hopefully this only adds to my legend.

Just out of curiosity, how do you define a boulder? I only ask because I have in my life seen 3 main definitions:

1. A rock or stone more than 10 inches in diameter.
2. A rock or stone more than 16 inches in diameter.
3. A rock or stone large enough that a single person cannot move it without assistance (lever, rope and pulley, etc).

At least 20 inches in diameter and weighs at least 150 pounds This one was 26 inches in diameter.

For the record, a lever isn't really considered "assistance" since it can only lift it so high, eventually muscles will come in to play. But, no, no lever was used, just sweat, muscles and a whole lot of determination. And a shovel.

Perhaps I should have made it clear that Crystal Frasier co-signing is a sign of credibility to Jessica’s posts. I thought I should wait to see where themetricsystem rates Crystal’s credibility first, but in full disclosure while I agree Jessica has strong biases (don’t we all?) the corroboration from Crystal makes that less concerning to me.

I am currently waiting for further developments before I cancel my subs and resign as VO. I hope that expresses my seriousness about the situation.

There are much more appropriate places to discuss/debate/argue over this type of thing like Twitter or Reddit, so I guess it was unwise of me to express my own misgivings with the developing story here, though I must say it is really cool to be put on blast over a misunderstanding though.

So I'm also not inclined to listen to her on these matters.
