Generally, we don't reprint a lot of products. Off the top of my head, here's a list of everything I can think of that Paizo has ever reprinted, broken down by whether or not things changed between printings...

Reprinted with changes:
GameMastery Campaign Workbook (switched from glued binding to spiral binding)

GameMastery Critical Fumble Deck (updated from 3.5 to PFRPG)
Pathfinder RPG Core Rulebook (now on 3rd printing, with incorporated errata for each reprint)
Pathfinder RPG Bestiary (now on 2nd printing, with incorporated errata)
Kill Doctor Lucky (new player pawns, incorporated errata into rules, added "Little Dog Too" expansion)
Pathfinder Companion: Adventurer's Armory (2nd printing coming soon, with incorporated errata)
Combat Pad (minor packaging changes on previous reprints; major graphic redesign coming on next reprint)

it depends on when amazon ordered them from the distributor. as I understand it, the latest printing of these two books have been out for about a month and a half, and the distributors were out (or nearly out) of second printing when the third was released to them. So if amazon/FLGS ordered thier book after that time, you should most likely get the newest printing

We're being careful to segregate our printings in our own warehouse, so we can confidently say that when you order from us you'll get the latest printing, but we can't guarantee the same for any other outlet.
Even though I think Amazon *should* have the latest printings of both by now, one never knows if one of their warehouses might still have old stock, or if their distributor might have some old stock moving through the system...

How can one identify the different prints? Does it say "2nd Printing", and if so, where?
Well, I can only speak of my personal experience with the Core Rulebook and the Bestiary. I imagine that this would also be the same (or at least, very similar) for other books, as well.
If you look at the Credits page, the very bottom lines should be 'XXXXX printing MONTH YEAR.' and the place of printing.
The PDF version, once updated, bears the last printing version. For example, my physical copy of the Core Rulebook shows 'First Printing August 2009', while the updated PDF now bears 'Third Printing April 2010.'

True... though I should note that the 1st printing of the Adventurer's Armory doesn't have that line, but the second printing will. (So if it doesn't say what printing it is on the credits page, you can assume it's the first printing.)

The bestiary is now available, so if you order it now you will get the new printing
The Campaign setting was supposed to be September, but apparently has been delayed until the new year.

The bottom of this page lists those books reprinted with errata. (Scroll down to the section labelled errata documents).
Those downloads also give you the information you need to update any out of date printing to the most recent version. The digest books are all the latest printing.
