As you may have guessed, this thread is similar in nature to the one dedicated to the Pathfinder RPG. What's different about this one is that we'll be speculating wildly about the Pathfinder Chronicles campaign setting itself and not the rules stuff.
I'll go first with my list of things I *think* we'll see in 2011.
Pathfinder Chronicles Campaign Setting World Guide - Tian Xia: I'm fairly certain 2011 is the year we'll see an adventure path set in Tian Xia and as such it would make sense for Paizo to publish a World Guide to go along with such an adventure path.
Book of the Damned Vol. III: Daemons: Princes of Darkness came out last year and Lords of Chaos is set to be released this year so I'm willing to bet my entire RPG collection (well, maybe not) that we'll see the third volume in the Book of the Damned series in 2011, this time focusing on daemons.
Classic Fey Revisited: Well it's about time, isn't it?
Guide to the Mendevian Crusades: I admit this is just me *hoping* we'll see a Pathfinder Chronicles book detailing the fight against the demonic hordes of the Worldwound. Possibly to be released along with an adventure path focusing on that conflict? A guy can dream, can't he?

Gee, I really kind of echo those opinions. The only thing I can add is I HOPE we see a BIG wall map of Golarion... *crosses fingers and beard*

I predict that the AP following Serpent's Skull will be set in Ustalav and that we'll see a Chronicle book detailing the gothic region (probably written in no small part by Wes). I think the followup to that will be Jade Regent (finally) and will launch at GenCon 2011 with a hardcover World Guide: Tian Xia and hardcover (setting neutral) Oriental Adventures rulebook. I guess it's possible these would be released later in the year to coincide with the AP actually getting across the Crown of the World and into Tian Xia, but they seem like excellent GenCon releases. I also think we'll see a Classic Mythology Revisited (Erik's said as much already), and if Classic Treasures and Lost Cities of Golarion do well, Classic Dungeons Revisited.

On a more serious note, I would worship the opportunity to play a Golarion computer game.
I'm not sure I would personally. Computer games are different genre to pen/paper RPGs. I have played them and enjoyed them for their own sake. The most memorable to me were "Planescape Torment" (arguably the finest computer game ever made (had me with tears in my eyes when I completed it the first time)), Baldur's Gate/Baldur's Gate II and the less story based Icewind Dale/Icewind Dale II. Though I enjoyed Neverwinter Nights and Neverwinter Nights II, they didn't have the same immesive wonder of the original Black Isle(now sadly defunct) originals.
Having said that I would rather see Paizo do what it does best and concentrate on its Pen/Paper products, supplements, Golarion and non-Golarion general offerings. If some other organization want to make a computer game based on Golarion then fine, they can license Golarion from Paizo. But I hope to goodness that it doesn't end up like "Temple of Elemental Evil", which ran based on Pen/Paper rules and the whole thing was a bogged down, tedious computer game experience. If your interested in my reasoning see below
Pen/Paper RPGs are a genre that we all enjoy and play, and its a genre that encourages groups of people to come together and enjoy themselves. There's nothing more enjoyable as a GM to see the players acting in character and enthusiastically discussing what they should do next.
Computer games are often solo activities that appeal to a different though not mutually exclusive personalities. I've played online games in the past and I often became irritated seeing other players discussing Britney Spears or episodes of their favorite shows. Such games often denigrate into such situations and any feeling of verisimilitude is almost impossible to maintain.
I play online games such as Unreal Tournament III for fun, but that's not role-playing, its just a way to viscerally, yet non-destructively, vent a little of the anger that builds up by being a member of the real-world.
I love to read, and RPGs give me a chance to create and allow others to enjoy being a character in a story. That's why I've loved them since my early teens. It is also a way for young people to spark their imaginations and by doing this they get good at math, reading, problem solving etc. to boot. In later life these things will set them up in good stead for the challenges in life.
Computer games have their place, and RPGs have theirs, but I would never want an RPG producer spend their resources creating computer games.

How about "War in Golarion", with a description (artwork) of land and naval warfare, soldier uniforms, warship types, air combat and typicial Golarion siege engines? And the Pathfinder mass combat system for those who like some crunch included. :)?
An important topic would be HOW magic is usually integrated into warfare. Also important in such book would be a good list of hooks how to effectively include the PCs into one of the many wars of Golarion. (spies, saboteurs, commandos, mercenaries, flying recon or whatever)

We still have big, big chunks of Golarion to reveal before you can get anything like a full world map.
I think the upcoming 32-panel map of the Inner Sea region will be as close as we get to that for a while.

Reading the NPC Guide, I'd like to see a similar book dedicated to ready-made NPC adventuring parties for the PC's to encounter as allies or enemies.
It could be a 64-page book dedicated to 10 different parties: Low, mid and high level good; low, mid and high-level neutral; low, mid, and high-level evil... and the 10th could be a "legendary" adventuring band, something like the Knights of Myth Drannor in the Forgotten Realms... maybe a party from a Paizo in-house campaign.
(And I'd still like to see a pinup calendar featuring the female iconics, but I suppose that's a faint hope. :-)

If the map made several years ago (boy how time flies) by Lilith and Fray (maybe?) is correct, the calendar is the same in Golarion from year to year. Perhaps a calendar for in-world dates with holidays marked could be used to track campaign progress over a year. If the year were left blank, to be filled in by a GM with "4710 AR" or "4722 AR," the same calendar could become a perennial best-seller as Arodus approaches each winter.

Then you should put in credits similar to PBS. "Inspired by gamers like you."
And I love the "Galarion" pinup calendar idea, definitely could be year neutral to avoid expiring.

This would definitely be what interests me.

I hope they release them sooner rather than later.
I don't want to steal thunder from Inner Sea Golarion, because I don't need it, but Asiatic Golarion is what's going to make me pay attention to the setting.

Guidelines on how to create a well-balanced NPC party would be welcome too... because it's not as "easy" as simply rolling up a half dozen random NPC's and just herding them together as a group. Adventuring parties tend to be more than just the sum of their parts.

With regard to a Calendar, don't forget to leave the box for the leap day on the end of Arodus (August) rather thann Calistril (February).
As regards the adventure party book, there is a problem that players in theory ought to keep out of it unless the adventure parties presented are solely intended to be allies, since some players will unfortunately act on knowledge of the stat blocks if they ever run into a party presented within it; thus any crunch for possible player use needs to be summarised over several pages at the back (or front) suitable for photocopying by GMs rather than scattered through the book in sidebars.
Sadly, I suspect that 2011 will be too soon for a 'player handout' version of the bestiary. (Basically what the PCs see if they go along to a local university/monastery and get a book off the shelf to look up what a blue dragon is or does.)

PCCSWG: The Inner Sphere -- Detailed setting material for running a planeswalking campaign around the elemental planes, Shadow, and the First World. Expanded City of Brass information; locations of portals; etc.
Book of the Hallowed, Vol I: Champions of Justice -- The definitive book on archons; first in a companion series to BotD.
Mages' Miscellany -- a collection of new spells and magic items for PFRPG.
Inevitable: Rise of the Constructs -- Golems gone wild! ;-)
