Without knowing your tastes, or what you've enjoyed thus far, thats a hard call. Thats like asking what food we reccomend. I prefer Chinese, Japanese, Thai, and Mexican. I also like KFC and Taco Bell, which is so not mexican.
As for Manga, I hereby drop the hammer and send you to OneManga. You should be able to while away many an hour there.
If you want some more reccomendations, post back with what you've enjoyed so far. Great to have another manga fan in the community!
Edit: As an overall bias-less partaker (I read shojou/shounen, action/romance/drama/comedy/ecchi/supernatural/etc) here are some I consider really good and worth the time.

Watched Le Chevalier D'eon. Two thumbs up.
I don't read, I watch anime, so my opinion may not be especially wanted, but before anyone stops me, I would add to Chevalier my following favorites:
Full Metal Alchemist
Samurai Champloo
Gankutsuou: The Count of Monte Cristo
Ghost in the Shell
Sayuki (only the first series, everything after that stank)
Last Exile
Gilgamesh
Ayakashi Samurai Horror Tales was also pretty enjoyable. Never did make it to the end of Inuyasha.
I assume that good anime would indicate better writing in the original manga, but I leave it to people who know to say. Tried to leave out those that I just thought were OK, and those that are simply features.

Rune Soldier/Rune Soldier Louie is another anime/manga series that might be worth checking out, if you don't mind your fantasy genre to be a bit light-hearted.
Another possibile avenue is to try the Guin Saga, a sword and sorcery style series starring a character that could be described as "Conan the Luchadore"- 'cause the main character Guin wears a cursed unremovable jaguar/leopard mask. Already out in manga form by Vertical and novelization form by Dark Horse Publishing and will be coming out with an anime series this coming year too.

Oh man, Rune Soldier Louie was great(and surprisingly set in the Lodoss Wars universe!). I still want to a high STR/CON, low INT wizard someday.
Does anyone here read Tou Ubukata's Le Chevalier D'Eon or Kia Asamiya's Junk: Record of the Last Hero?
I don't really have much in the way of positive feelings towards the Le Chevalier D'eon manga, primarily because the anime was fantastic and the manga is a very different animal. This is personal taste here, and your milage will vary, but I while I wholeheartedly recommend the anime, I just can't do the same for the manga. Where the anime was a great fantasy/horror/mystery/political suspense/historical drama mash-up, the manga came across as more-or-less a magical girl series.
Of course that might appeal to some readers more than the anime. It depends on what you're looking for.
Berserk - perhaps the darkest and most epic sword & sorcery manga ever.
I'd do away with the "perhaps", but then I remember there actually are moments of hope here and there in the series. But hot damn if this series isn't hell on its cast...
Monster - extremely provocative and intelligent murder thriller dealing with serial killers, neo-Nazis, Czech secret police, and brainwashing.
Reading, haven't seen the anime yet. I also really enjoyed the Master Keaton anime, which is based on the manga by the same author. It was a real fresh of breath air back then.
Token recommendation for Nausicaa here.

I have Dominion Tank Police and the follow up, Dominion was a big Manga, 100 pages (maybe more :S) I think, the follow up was 5 shorter ones.

Only the first one is out but, if you were a kid who liked monsters and spent countless afternoons trying to spot bigfoot in the woods near your house, I recommend Yokaiden. It's about a kid who studies yokai and ends up finding their hidden world after a kappa kidnaps his grandmother. The second volume should be out in October.
I'd also like to recommend Apocalypse Meow (Cat 5hit One in Japan*) if you're into war stories. The American release is only three volumes so it doesn't take alot of effort to get through and it's about bunnies fighting the Vietnam conflict. I mean, how cool is that? Bunnies! With M-16s and grenade launchers! An animated series is due out this fall.
*I can't put an "S" in that second word of the title but that shouldn't have been a 5 if you catch my meaning.
