pathfinder and starfinder will both ship in the same monthly package if that is your shipping option right?
All of Paizo's physical releases for any given month are released at the same time regardless of product line.
(That statement does not extend to licensed products like Dynamite's Pathfinder Comics or WizKids' Pathfinder Battles minis, or to digital-only releases like Pathfinder Society Scenarios.)

For Gen Con pickup options, will there be a separate line for them, will there be select times for pickup, or can we get it right away? I have a 1PM Thursday Starfinder event and would like to have my book for it.
We'll announce details on that shortly after the July subscription shipment goes out.

I'm curious, are all physical subscriptions shipping from the US? I live in the EU and I'd love to be a subscriber, but i'm not particularly keen to pay the cost of the books again in shipping and import fees just to get a physical book!
Honestly a PDF version of this subscription would be ideal for me...

They do ship from the US.
As I understand it, early on Paizo had some bad experiences with outsourcing subscriptions in Europe. Although they very rarely say never, subscription shipments from outside of their warehouse is the closest I've ever heard them get to ruling something out.
PDF subscriptions are very unlikely for products with a physical version. Although there's a lot of people who would welcome the change, there's significant risk that it would damage their current, very successful business model based around the current subscriptions.

I'm not seeing an option to start my subscription with the core rulebook? did I wait to late to sub, or is that just not an option?
There is some wonkyness going on with the system currently as they are preparing to generate August orders today. if you contact customer support Im sure they can help you get your subscription set up correctly.

I'm confused. I was going to sign up for the Starfinder subscription and with the Core Rulebook haven't been released yet, thought it would come as the first book in the subscription. However, it shows that the first book will be the Alien Anthology in October. So, will this mean that I'll have to buy both the Core Rulebook and .pdf separate now?

So is the StarFinder Subscription from now on for the Second Edition or should we wait until it gets announced?
It will be like the transition from PF1 to PF2, it will use the same subscription. So yes, this will become the SF2 subscription.

It was quite "funny" receiving a message saying I can download the PDF for player core, then going to my downloads and click on it, just to find is a one page document saying "Your download will be available on the 31 of july"
I was kind of aware the PDF was not going to be available as soon as the book was shipped, but I got excited when I received that email saying "your pdf is ready" :'D
