So let me just start by saying that I'm loving the playtest. It's quite literally my ideal high fantasy RPG. Customizable, slick and elegant, flavorful, etc. My first RPG was Pathfinder 1e, but as much as I loved all the options, the clunk and complexity got to me and I could never see myself running it. I played quite a bit of 4e for a while which I enjoyed because of the options of customizing your character through power sets. Lastly, I went to D&D 5e because I liked its elegance and simplicity, and it had the illusion of customizability (the first few levels give you a fair bit of options, but once you're locked into a path, you're generally locked in). Pathfinder 2e takes all the best parts of those games and combines them, and I really look forward to it being my system of choice.
HOWEVER, I have one semi-major complaint. I think there is some arbitrary feat gating, especially for martial characters. For the most part, I think class feats are a great design decision and tend to be very flavorful and exciting. At the same time, I think when people talk about PF2 feeling less customizable than PF1, I think it largely does come down to the issue of feat gating. Now, I think most feats probably should be gated. But, I also don't see a reason a paladin shouldn't be able to pick up most fighter feats instead of one of their own class feats without having to multiclass. I think there is an interesting decision to be made between "do I want to be more paladin-y or get better at the purely martial aspect of the class?". If it were up to me, I'd make most fighter feats (and maybe some of the metamagic feats but I haven't looked at them too closely) available to any class to take as a class feat. Potentially, you could do a similar thing to the Fighter multiclass where you just double the level required to gain the fighter feats (so Double Slice is level 2, Aggressive Shield is level 4, etc.).
I understand the desire to give fighters their niche. I think fighters are great because of how wide their character concepts can be. At the same time though, I think it's arbitrary to limit the feats that just make you better at fighting for other fight-y classes. I'll probably house rule this at my table, but I wanted to hear everyone else's thoughts on this. Are there balance issues with letting sorcerers take Point Blank Shot? Am I overlooking something?

I'm a little confused on class feats. Say I level up to level 4 as a bard and I get a new class feat. Can I only pick a class 4 feat or could I also go back and pick up another level 1 feat?
