I don't have a core character created at this moment, but I'm interested. If I know what class I would use (I'm thinking a martial class), could I sign up and make the character Monday?

Sure ... until I have enough characters I can't start the second table anyway. Put yourself on the signup sheet as a level 1; depending on whether we get any more signups, I may see about shuffling who is where for best level distribution.
