Grrr,... again! ok, please refresh failing memory! HOW do you cast a spell in melee range without taking an OA in 4th ed??? I feel the need to blast somebody! ;)

You can't. There are a couple of feats that let some classes do that, but they came out after we built these guys. You can only take one OA from a creature per round though. In this case, you're going to take an OA regardless, it's just your choice if you try to move before blasting.

make sure to add the +3 for all attacks until the end of the encounter (Lead the attack power) if not already take into account. Not sure if Seram did or not.

Now, what can one do while grappled??? I'm insubstantial till after this action, what do I have to roll to succeed to cast while grabbed? (I REELY need to get a 4th ed rules book! ;P

You can cast while grabbed, no problem there. It will get a chomp on you while you do so unless you've got a melee or area attack up your sleeves (close burst or blast - something like that).

If you want to break free (cue Freddy Mercury), you can make an Athletics check v its Fort or an Acrobatics check v its Ref. That counts as a move action and you can (if you make it) shift as part of the move.
