(unclear how much these differ from craft: leather/traps/carpentry, but they're in the common professions list)
The way I see it, tanner is more of the production to get the base materials (tanned leather) that the leathercrafter uses, same as woodcutter (wood) for carpenter.

A Craft skill is specifically focused on creating something. If nothing is created by the endeavor, it probably falls under the heading of a Profession skill.
So, the crafting is to make a specific item(s), where as the profession is just making money whilst not necessarily making anything (at least not making anything game mechanics wise).

Yup. Craft: baked goods lets you make delicious cake. Profession: baker lets you make delicious money, but says nothing about the quality of your bread.

KS: Nature is obvious for both of them. Alchemist is very traditionally gnomish and appropriate. craft: brewing would be interesting. They could use wild berries, fruits and nuts to make various beverages. Healing would be natural for both. Proffesional Skill: Herbalist and the craft potion feat would combine naturally for a profession.
If you are considering the potion maker, you might make one a druid with the Druidic Herbalism Divine Bond since its basically what the class feature does.
