Along with channel energy, that should cover most of the core rulebook. The bestiaries, of course, will have much more variety.

Curse stuff is the big one. Bestow curse is a great, flexible debuff spell that can be often put on powerful casters, and it can serve a narrative purpose as well- so you should expect it to come up at some point.
Also some necromancy stuff- most necromancy uses fort saves, but the ones that do not often focus on souls (such as magic jar or soul bind) and as such it goes to will saves.
But as Wraithstrike noted- if you find something that only covers mind affecting effects... then you are golden. It covers most will saves... and it covers the WORST will saves- the "murder your whole party and lead to a TPK" will saves.
That is why I often play half elves on poor will save classes- +2 to will, +2 against mind affecting effects. That is most of the way to patching up a poor will save for the most important rolls.
