I'd be Stormbringer, my ripped off Elric type sorcerer I played in DC Heroes from 1988 to 2000. Even though I've far and away played more iterations of D&D and then Pathfinder that remains my all time favorite character and gaming experience. As to the why, in addition to being a very powerful character and hero from Justice League Canada he was also a heavy metal guitarist and vocalist. So much fun.
In our world, where magic doesn't work, I'd be Diehard, another DC Heroes character. All his powers added up to things that made him utterly indestructible; no super strength, no superspeed, nothing like that. He just couldn't be harmed by anything. He once took a punch from Superman and had to take a taxi back to where the fight was going on. He was also a member of Justice League Canada. Good times. I miss that stuff!

My GURPS character (circa 1990-late 2000s playing time), Thales of Miletus. A Highlander-esque immortal in our world, that very long campaign ran with a cadre of immortals of ancient times through the then-modern era with the campaign wrapping up in the days of dial-up internet.
One of 3 PCs I would play anytime, anywhere and to actually be him, the most human of the three by far, is a genie wish that I would grant the genie's freedom for to gain all of that in the spirit in which it is intended.

In a world where Magic works, no doubt That I'd play my old character who was a high level wizard with powerful psionics (in modern terms, a wizard/psionicist gestalt)
In the modern world... maybe my old Amber character, Tuan son of Bleys who spent quite a bit of time on Shadow Earth...or maybe Charles de Cygognac, a vampire who owns a castle (and an Armagnac making concern in Southern France, a wine Château near Bordeaux, and a rare book shop in Paris' Latin Quarter and who is driven wherever he goes by Choupette, his ghoul/secretary/driver/leman... if that's still too magical, I'd play Mark O'Reilly, a former marine who lives in France and writes thriller novels.

Too many of my characters wind up being a bit too traumatized for me.
There was Big Al, the Vietnam Vet weirdness magnet biker from a Cthulh game. He would have been fun to be, after the war and before the game. After he wound up becoming a vampire when we interrupted Dracula's summoning of Nyarlathotep, not so much.
Some of the Amber characters would be awesome to be, in those times when they were just bumming around or settling down in Shadow. Except that inevitably Family would keep showing up and trying to kill me. :) Or vice versa.
Duncan, master musician and family strongman, mostly tried to avoid the family conflicts and spent a lot of his time learning new musical instruments and styles. And occasionally taking a few years to become a big star somewhere.
Until he wound up getting too pissed off and murdering one of his sisters (who had tried to kill him multiple times, but maybe not this time) and spent much of the rest of the game estranged and sometimes in hiding from the rest of the family.
I need happier characters. Or possibly less sadistic GMs.

I have a character I deeply loved in a Cthulhu game... the guy actually believed in fairies and the supernatural, and had a POW of 18... in his short career, the only SAN he ever lost was from reading a couple Forbidden Books. I did not mention it because, living in a Cthulhu universe, he was doomed to madness and death anyway... so, not really fun to be
Charles de Cygognac was from a Vampire the Mascarade game, so being a vampire was not that traumatizing, especially when you had the means to live the good unlife.
and yeah sadistic GMs and GMs who play GM vs Players games are a big problem... I play for pleasure, not for competition or to prove I'm better than anyone.

In a world without magic, I'd play Celeberon, an Achilles Neo-human I built for a Rifts campaign. No magic? Fine. She'd lose the use of her Amaki TW-Psiblade and her minor magic sword wouldn't be working. But her psychic powers...yum. Supernatural transformation please. Yet she tended to like physical activity a lot more than most psychics. Sports, weight-lifting, whatever.
In a magical world? Depends on if I want to be nice or not. My alu-fiend enchantress, Darley, for nice...my 2E specialty priest of Mystra/dual-classed militant wizard invoker if not. He was born 'Magos' but named 'Doombringer' for a reason.
...Probably 'not'.
Darley had a very involved background and history, but was respected by friends and enemies alike, even those who wanted her dead. She collected spells and knowledge from everywhere. Innate demonic resistances helped though, and lived with perpetual foresight.
Magos: for when it absolutely must be blasted into oblivion.

Interesting question...
My top pick would likely be my Drow Mage at over 100 levels his mastery of magic is absolute. This immortal caster has survived god wars, created worlds, and is the architect of the planar maze which he has used to forever side track those he does not wish to face. Limitless power is always fun.
Another option if magic is TOO hard to use would be Quantum my advanced android from a multiversal setting. His engineering knowledge is well into the tier where a TARDIS can be constructed.
