I have a week before I start this game and I pretty much have everything mapped out, with the exception of the players going off cuff. I asked them last week what place they would want to start in and gave them the options and they choose Oreld’s. Now knowing that this store is stocked at the initial attack what sort of extra things might they find on the shelf when trying to gather supplies after the attack besides what is listed

Honestly, nothing besides what is in the shop already. And nothing extra in any other locations as well. There is rules for what happens if your players stay in Phaendar longer or want to go to different locations than those scripted. Part 2 deals with survival and living in the woods, If you allow the PCs to leave Phaendar with tons of supplies, this minimizes the impact of the invasion. Finding a home and worrying about food and morale is a huge of Part 2. If your players followed the advice of the player's guide, then they will have sufficient ranks in Survival so really this shouldn't be an issue.

Now if your players aren't going to be that interested in worrying about food gathering, then get them to start the basics. And then just gloss over that and do more random encounters.

Knowing my players their thoughts will be that since it is a shop that sells stuff there should be fully stocked shelves. The description indicates that if you get there after the initial start of the attack then a lot of the shelves items have been destroyed and the list of what is found is what is left. I sometimes have to over think in order to figure out what my players are going to be difficult about regarding details. I guess I could say that a couple of shelves were knocked over in the ballista attack.

Maybe, since it is the middle of the Market Festival, demand has increased and Oreld's supplies have been somewhat depleted?

If you'd rather stock the shop up to the rafters, go for it. The PCs will still be limited in what they can carry, especially if they want to move swiftly.

What Gonturan said. It's not hard to imagine that the shops are sold out of most of their usual goods.
