I'm having trouble interpreting what devices can be combined with one another via the maze-core tech shown on page 87 of the Alien Archive.
For example, can I combine my laser rifle and grenade launcher? They are both weapons, but the grenade launcher is an analog device, and thus may not be considered a powered, technological device.
Where exactly does one draw the line?

I'm hoping it's not so strict as that. Seems odd to me that there might not currently be a way to have a rifle with an underslung grenade launcher.
By my reading, it seems to limit your choices to one of two groups: powered items or technological items. If it's not powered, than it has to be a technological item, and vice versa. Note that this means something as simple as a cable line or fire extinguisher qualifies.
However, it seems to further limit your choices in those two groups: component items must also be melee weapons, small arms, longarms, heavy weapons, computers, or technological devices.
Technological items is redundant, so the second set of restrictions really only applies to the powered items group.
Does it seem like I am interpreting this correctly?

Technological items are those presented on page 218-221. Any weapon, besides those with the analog special property is also technological in nature and therefore I would argue also covered (powered or not).
All weapons and armor are assumed to be technological in nature unless they have the analog special property (see page 180).
So in my opinion any weapon without the analog special property and all technological items on page 218-221 can be added to a maze-core

So I can combine my laser rifle with a cable or net, but not a grenade launcher or bayonet.
Yeah. Great.
(Seriously though, thanks for the clarification, Shaudius.)
Well, you can combine your laser rifle with a plasma doshko or reaction cannon, that seems better.
An underslung bayonet or grenade launcher is missing the point of maze core. It's not bolting two (sometimes simple) pieces together, it's combining common parts so that it shifts between complex forms.
