I used to be able to see the top, top few, or top several most recent threads in the Gamer Life part of the forums. I.e., it didn't just have the tabs for Movies, Television, Comics, Music, and so on, but would let you see the most recent activity within those sections without having to do anything. Now they've changed all of a sudden. Is it something I did on my end (if so, how do I fix)? Is it a deliberate change?
I did notice the difference between the triangles next to the expanded sections (they're pointing down) and the triangles next to the unexpanded sections (they're pointing right)? Clicking on them has apparently done nothing. What to do?

Clicking those triangles should toggle between revealing and hiding the content for that subsection. If that's not working, try signing out and signing back in.

Clicked the triangles, got a spinning wheel, no change. Refreshed the page, no change. Signed out, then back in, then clicked triangles and refreshed the page, no change.
Still can't see the recent contents of those subsections without leaving the main page.

Okay, halfway fixed the problem at the cost of another problem.
Was able to successfully close/minimize the Starfinder General Discussion forum which resulted in literally every other forum opening up instead. Of course, I still need to be able to browse the SFGD subsection AND the other subsections from the same main page, so not fixed, but I thought I'd mention that bit of sort-of-progress.
Still don't know what "deleting paizo.com cookies" means.

Depends on your browser. For chrome:
On your computer, open Chrome.
At the top right, click the three dots and then Settings.
At the bottom, click Advanced.
Under "Privacy and security," click Content settings.
Click Cookies.
Under "All cookies and site data," search for the website's name.
To the right of the site, click Remove (trash can).
Other browsers would be similar.

I don't have an iPhone, but these are the directions they supply.
To clear your history and cookies, tap Settings > Safari > Clear History and Website Data. Clearing your history, cookies, and browsing data from Safari won't change your AutoFill information.
You might see an option to clear data for a specific site once you are in the settings. If so, you can clear Paizo's only. If not, you might have to just clear all of them. This shouldn't be harmful.

We're getting a couple such reports... we'll look into it. What browser are you using, and does it happen if you try a different browser?
Um, iphone6, Safari, or Google, one of those (I think Safari is what you're talking about). How does one use something besides Safari on an iphone?

I don't know whether this is related, but I've had problems with the Gamer Life section for some time. The sub-forums don't expand. On some days, I can click on them to get a page devoted to one sub-forum, but on other days, clicking on them doesn't do anything. The easiest solution I found was to log in. So now I just log in whenever I want to browse the forums. (I wouldn't have complained, but maybe mentioning this might help someone diagnose Tectorman's problems.)

I think I understand what you may be experiencing: by default, we collapse certain forums when you are not logged into a paizo.com account. This is because we have dozens of subforums that make the page fairly unwieldy to navigate if they are all left unexpanded, and so certain subforums are prioritzed for guest view. If you are logged into your account, the site should be storing which subforums you've left expanded and unexpanded.
