Does size no longer affect AC, Stealth, or attack rolls?

Correct.

If a PC race is meant to have some sort of penalty or bonus it will be given in its stat block. When building monsters, the GM decides if he wants monsters to suck at stealth or not, or to be harder to hit or not.

What about movement speed due to size? In PF if you were a small race you often had a 20 ft movement.

I like the simplicity of removing the size modifiers even if it doesn't make sense that a small creature would have an easier time hitting a colossal one...

Speed for races of different sizes have always been technically arbitrary, if a race is meant to have a speed of 20, 40, or even 60 ft. it will simply say so in the race's entry.

Otherwise they have a speed of 30 ft. like everyone else.

Currently we don't really have robust rules for creatures outside of medium and small, which are treated as not being different.
