Personally, the 3.X baggage adds up too quickly and PF gets tiring, but my group prefers it to almost any other system for D&D.
So I'm looking for classes that shake things up enough that they can shake off some of that PF fatigue, whether it be through interesting flavor, a new or different take on mechanics, or what have you.

Other than one shaman and one oracle, for the past few years, I have played core classes almost exclusively (unchained versions included). I recently started feeling a similar fatigue set in for myself - so i decided to try and figure out the Kineticist - the mechanics are wholly different from most other PF classes, and I am really digging it.

All of the Occult classes play pretty differently from the corebook set, as well as being generally more complex / more fiddly bits. This might be what you're looking for. I also find the Alchemist fairly unique and different from other D&D classes.
Flavor is harder to talk about, since it depends an enormous amount on the campaign and on group tastes. Horror Adventures has some excellent archetypes for many of the core and base classes -- personal favorite, the Gingerbread Witch.

I would suggest a medium. Most people say that you always want to channel the same (champion) spirit each day to stay competitive damage-wise, but try out different ones. Being able to decide"hell, we need to sneak into place today. Let me grab full ranks in stealth to handle that" is pretty powerful.

The occult classes as a whole operate differently to core classes and are pretty much all quite complex and require a bit more attention than a barb or a sorc might to manage.
Alchemists and Witches are both fun too in my opinion Witch is a particular favourite of mine as it feels like a more themed slightly less powerful Wizard that doesn't have the same grab bag feel the wizard where you just seem to get everything.

I enjoy playing skill monkey classes these days, particularly the 6th level caster ones. Investigator, Bard, Inquisitor, even Hunter in some ways.
With these classes I feel it's a bit easier to get away from building a character that specializes in one thing, and more easy to craft the character I want to play... without resorting fully to the cheese of a 9th level caster.
That said, I enjoy Sorcerers too.Very possible to create a thematic sorcerer that is easy to play, just a shame about the skill points.
