If I was to buy a Pawns box, what would you say would be the best box to buy for PFS use besides the Bestiary Box, which I own?

Well, they released a Pathfinder Society specific Pawn Box that includes a number of iconic/repeat appearance NPCs, as well as some arc/scenario specific ones (Destiny of the Sands, Serpent's Rise).

NPC Codex is also great for all the... well, NPCs. Also, Inner Sea Pawn Box if you want the nifty Golarion specific entities.

I second the NPC Codex. It's probably what I use most of all of the pawn sets.

If pawn collections are also in the running, the summon monster pawn set is also really good--not just for you but also for your players.
