Hello there. Last game I was pitting the boss of Hell's Vengeance's first book against all those gruesome evil PCs. She has smite evil 2/day, so in round 1 I smote (sp?) one PC, and in round 2, smote another. Then round to round proceeded to smite PC 1 or 2, depending on my mood.
Was this right, or can you have only one smite going on at the same time?

There's nothing the writing of Smite Evil that would indicate any restrictions on its usage, so i would argue Paladins can smite multiple targets, each smite takes a swift action.

Chess Pwn, yes, I spent one swift action to activate smite 1 in round 1, and one swift action to activate smite 2 in round 2. In round 3+ whenever I was attacking PC 1 or 2, I wasn't spending more swift actions because the smite evils were already active.
PRD:
As a swift action, the paladin chooses one target within sight to smite. [...]
The smite evil effect remains until the target of the smite is dead or the next time the paladin rests and regains her uses of this ability.

Yep, totally right.
A level 19 Paladin can smite 7 creatures.
If they're all smitten (heh) at the same time, and the paladin can somehow attack all 7 in the one round they all take the extra damage & are easier to hit etc etc.
Think of it like a spell. You "cast" smite on one creature, that creature is affected. If you "cast" a second smite on another creature it doesn't end the first one, you just now have 2 creatures under the effects of your "spell".
