Uncommon or Interesting Enemies

Advice

I have a party of 3rd level characters that will be adventuring in an area consisting of mountainous, underground, and a mushroom forest. We've all been playing PF since it dropped.

What are some uncommon monsters or interesting enemies to throw at them from CRs 2-6?

Bestiaries I-V only, or Codexes, or Ultimates. I don't like much splat.

Ettins are pretty nifty I think

So, I just found the Fear Eater which looks awesome. It's a caterpillar fey that scares people and uses the fear to grow mushrooms that it sells to other fey. It's CR 5.

You can view the bestiaries in the PRD by CR as well.

Have a pool with nymphs. be sure to hype up their graceful swimming and time how long it takes your players to realize you're talking about dragonfly larva. One is CR 3.

Doombats might be a good.

They wouldn't really be a major threat, but even still, Pugwampis would be extremely frustrating for your melees.

Mutant template (B5) should be good for surprises. If you have multiple creatures, each could have their unique mutations.

Speaking of surprises, a raktavarna (B3) might be new to them.

Finally, I successfully annoyed my players with a hidden pugwampi (B2) - it spoiled their battle nearby with forcing both sides to reroll.

I love pugwampii.

Also, as far as sorting goes, I was just hoping for input into what people actually find fun/challenging/interesting.

Awakened animals with class levels.

If you create backstory for them, any encounter can be interesting.
(Why are those kobolds maintaining this road?)

I second the pugwampis... have 'em surround a mnemor boss and you've got a cool encounter! :P

I'm using worgs with OA class levels as villains.

Issues with my campaign tend more towards too much fluff and backstory rather than insufficient.

I didn't think about awakened animals.

Troggles from the Monster Codex are pretty neat, and Zuvembies need more love in general.
