Characters with No classes? Escaped Slaves.

Advice

So I am planning on running a campaign where all the PC's have been enslaved for 15 years by demons. I have the setting designed and all that that explains how they escape and could further avoid being captured again. But my real question is. Is it posable to run characters with no classes/Generic Class?

I have run a few Pathfinder games before but not one with this premise. I am also heavy into GURPS where I was originally planning on making this game into but decided to make it a little simpler by using Pathfinder. But the one thing I loved about GURPS is there were no classes per say, which is what I am needing right now.

Essentially players won't be able to just cast magic or have some trained feats until they pick that up from the world. Is there any guide on how to treat classes like this?

Well, you could try NPC classes. Such as the Commoner

Sovereign Court

Pathfinder Starfinder Society Subscriber

Give them each a level of commoner to begin with, then replace it once they've trained into their new class.

I was thinking of commoner, so it sounds like that's my best way forward.
