I was thinking of resubscribing for Horror Realms. However, looking at the release schedule, it looks like there are two books that month. I have no interest in Inner Sea Temples (and not a lot of money to spare, either). Will there be any way to subscribe and get just one of the two?

Typically if two items are scheduled to release in the same month, you'd get both of them automatically with the subscription. However, if you wanted to wait a bit until the October options are showing up on the subscription page, it may display Horror Realms as an option to start. (I'm not 100% sure yet, since these things are liable to change.)
It may be that the two October titles won't show separately, or if they do it wouldn't be until that month's subscriptions are already shipping. For now, I'd say the best bet would be to wait until it gets a bit closer to see what the options end up being. If there's no way to do it from your end, we'll be happy to see what we can do from our side. :)
