There is no rule of two.
The only rule is, that each class feature can only be modified or traded once.
That last rule however serves as an effective cap on how many archetypes one can take, even if that cap isn't going to be numerically the same for every class.
Generally however, the fewer tradeable class features you have, the lower the effective limit. Or like with Rouges and Bards,where practically every archetype takes out the exact same class feature.

Or Mediums. Every Medium archetype from Paizo alters the Spirit class feature. I had to search through a fair amount of third party material before I found a Medium archetype that was actually compatible with two other Medium archetypes.
