i know of only one and that's an enemy recklessly moving into your reach. but my DM plays very much Dm vs. Pc and is stingy with the rules. i ask because i recent put together a what i thought was an attack of opportunity and he shot it down by say he would just have everything attacking me 5 foot step into my range thus negating my AoOs. i am sure there is a teamwork feat that allows you an AoO if your ally is attacked.
how can i maximize my AoOs not though the nuber of attacks but knowing what i can AoO on.

A favoured tactic is to use a Reach weapon, such as a longspear or a glaive. Those give you a reach of 10 ft. (though you can't strike within 5 ft.). Enemies with only 5 ft. reach would have to move through a square you threaten in order to attack you - provoking an attack of opportunity.
However, you will most likely only get one AoO against any one enemy with that tactic since after the first round, the combat will be a dance of 5 ft. steps, you moving away from the enemy and the enemy moving towards you.
You can further improve this tactic by using Enlarge Person.
Also note that a tactic to combat reach weapons is to have reach yourself. And the DM is at an advantage here, since he can bring in monsters with natural reach.

What I was thinking would be cool is to be a Phalanx Soldier Fighter Archetype. At level 3, you can use a Polearm in one hand and a shield in the other. I'd take Shield Slam which gives you a Free Bull Rush with every Shield Bash. So you can hang back and attack enemies with Reach, then when they do manage to close in, you can just Bull Rush them away.
Or maybe take Great Cleave and hit everyone both 5' and 10' away from you with your Lucerne Hammer and you Shield.
With Greater Bull Rush and Paired Opportunist, the Shield Slam thing turns into a swell Attack of Opportunity build.
