This should probably be a general rules question, as I am not sure how much flight is covered in the confines of the Beginner's Box.
In the Core Rulebook however, a collision while flying using wings requires a DC 25 fly check or immediately begin falling.

Without this specific feat: Flyby attack you can't do that.
There is an equivalent feat for land movement.
Normally you can move and then attack or attack and then move, but you can't move/attack/move.
The ability to move before and after an attack is very powerful if used well, so acquiring it has a cost in the form of it requiring a feat.
Note that it require a Fly speed. That mean that your character should have a permanent way to fly. A simple fly spell or a glider isn't enough.

Nope if they are just hitting someone it would not cause a change in direction. Remember the space you are in is a 5 by 5 foot square so there is room to move. So thematically it can cause them to change direction but they would be able to recover before moving forward into the next 5 by 5 square. You are considered to be dodging, weaving and ducking already in the space you are not a just standing there.
