I feel bad for having all these questions, but I have them.
Even if I'm not trained in it, could I make a Performance check for a Day Job check if I'm not trained in either Craft or a Profession either?
Reason why I ask is because Performance is a skill that normally can go untrained. Although some of them do require items, like (Keyboard) or (Percussion)

Which is why I've been trying to have at least 4 skill points with any PFS character. 1 for a craft or profession, 1 for a knowledge skill, 1 for Perception, and 1 for whatever fits the character concept. If I have skill points beyond that then I'll start going for other things. Don't always go for a knowledge skill though. Might go with sense motive instead, depending on the character.
Of course that does mean I may need 12 to 14 Int, depending on race and class.

That's completely unlike my skill choices. I always make sure I have one social skill trained, just so I can participate in non-combat situations.
After that, it's whatever fits the PC. Some have day jobs, while others don't. Some have perception and/or sense motive, while others are intentionally built to be clueless. Most have at least one knowledge skill, based on what makes sense for the character.
I like having skill ranks, but I can settle for 2 per level on certain PCs, like my clueless paladin with high diplomacy and not much of anything else. I'd never dump int so far that I only get 1 per level.

14th level Cleric here... I have basicly two skills..
Perception (where I can out-do most any PC of my level)
and ... a bit of Diplomacy, a rank in Profession Matchmaker... And one in Kn Religion (class skill gives me a"2" in it)
Only two skill points a level (and one of those is the Favored Class Bonus).
Yeah - skills are not my suit.
But I haven't really found the lack - I normally leave all that to my fellow pathfinders.
But then, that's their 15 minutes of fame, and who am I to deprive them of that? We all get our enjoyment differently - and that makes this a wonderful game right?
