Dipping caster classes and effective Caster Level?

Rules Questions

Say I am a character level 5 Arcanist, obviously with caster level 5 as well. Dipping into say Fighter or Monk would be stupid because they do not gain any spellcasting, so I would obviously lose spell progression but I would also lose precious caster level. Now if instead I dipped into another casting class such as Sorcerer or Wizard, spell progression would still be left behind (as I gain the spell progression of a lvl 1 Sorcerer in its place) however, character caster level progression would remain intact correct? Casting a fireball would roll up 6d6.

Nope, you would cast Arcanist spells as a 5th level Arcanist and sorceror spells as a 1st level sorceror. Each class has it's own individual caster level.
Your caster level is your class level unless another effect changes it.

A character with one level of Sorcerer, Wizard, Cleric, Druid, Magus, Witch, Fighter, Monk, Summoner, Alchemist, Shaman, Oracle, Bloodrager, Ranger, and Rogue would not have higher than Caster Level 1 in any class.
