Both will be difficult as you don't get the bonus feats. I recommend catfolk if you're wanting to do melee since Kitsune have the str penalty. Two weapon fighting will be difficult as it needs a lot of feats and you need two light weapons or one One-handed and one light. I don't know if there are any light axes. Most of the weapons you're looking at, axes, can't be used with weapon finesse.
What level are you starting at? That's important info for more advice.
EDIT: Also you're giving really short notice during the middle of the day, with very little info about what you're trying to do. So don't be surprised that no one responded yet.

As Ms. Pleiades said, characters with Medium BABs don't make good TWF unless they have a way to add some serious to-hit bonuses to their attack rolls. Your best bet is to grab a bit two-handed weapon for combat. Plus a two-handed weapon doesn't lock you out of spellcasting; you can take one hand off of the weapon as a free action, cast your spell, and then put your hand back on the weapon as a free action.

2H vs TWF for a skald? The 2H is much more evocative of traditional viking culture, but the Iconic Skald is a TWF, so your milage may vary.
Honestly, though, its very difficult to do for a non-human because of the lack of feats.

We are starting at 8th level and will a Katana be good for a 2 handed weapon?
You could do a katana or a nodachi. I wouldn't bother spending a feat on Exotic Weapon Proficiency, though. If you go Katana, you get the deadly ability, which is +2 damage on coup de grace attempts. If you go Nodachi, you get the brace ability, which allows you to deal more damage if you ready your attack against a charging opponent.
