Has anyone ever made a compendium of stats for non-statted NPCs? You know, the ones who are mentioned in the lore books and adventures?
I'm asking becuase I'm thinking of having my S&S group go after the red dragon, but her lair has no solid encounters built in. All of her minions are high level clerics and the like. I want to make sure I'm running things well, and if someone has already made good stats for them, I'd be happy to use those.

Nope, you'll have to do that work yourself. It's the burden we GMs bear. You could re-skin some of the NPCs from the Serpent's Skull adventure path, particularly the high-level cleric fought at the end of the final adventure, Sanctum of the Serpent God. I think he's about the power level of the high-priestess serving Aashaq.
Also you might want to mention that the dragon you're talking about is Aashaq the Annihilator from Dragons Unleashed (I'm assuming). Paizo has put out such a huge volume of work that being specific is pretty much a necessity.

There are plenty of third party publisher supplements with NPCs for just these purposes. INSTA-NPCs and THE NPC COLLECTION are great places to start. 100% CRUNCH is another option as well.
Insta-NPCs isn't what the OP was looking for, at least not what I gathered from the product description. They give you random tables to roll on for personality characteristics, but nothing with NPC stats (as the Insta-NPC line is system neutral.)

INSTANT-NPCs then. I confuse the two names at times.
