I wanted to play a character with a very specific concept in mind.
That concept was a character who has lived for a very long time but has spent a majority of that time apart from the world, which is why he has decided to go adventuring. What did he do with all his time if he was out seeing the world? Well he was studying of course what else. He was learning magics, and martial arts and a variety of other things from books and masters of the arts, but never out on his own and this has finally driven him out of seclusion and into the big wide world.

I want a character in my upcoming gestalt game that is adaptive, and I mean can do anything from day to day. I know Wizards are good for this because they can pick their spell load outs day by day and I would like to follow that line of thinking. One day he needs to be X but tomorrow well it looks like Y would be a better set of spells/skills to use.

My only idea is a Arcanist Brawler but with a few dips to make things interesting.
Like a dip in Scholar yes its third party but the influence on knowledge rolls and AC is sweet. Monk of course is a great dip class I was thinking two levels of Monk maybe MOMS to pick up Pummeling Style and Charge for when I go into melee.
Int and Wis to AC, along with Dex obviously means my guy can stay light clothing for Arcanist and still have a nice AC so going into melee wouldn't be too much of a risk. The Half Level to Knowledge rolls makes him very bard like in his over studying of the world through books and stories from others.

But should I split it up like Scholar 1/Arcanist 19//Monk 2/Brawler 18 or with Scholar on the Brawler side?

The game is set at level 5, possibly level 6.
I am confused on what my saves would be and my BAB due to the added +1 and so on from multiclassing, can anyone fill me in?

I was picking Elan for my class, mostly because of my DM he loves Psionics and has ruled that because they have no maximum age they can be total immortals, and he ruled that since their text say they have to move from place to place to avoid being noticed it means they do not physically age but their minds grow so I could cheese it with a +3 to all mental stats.

EDIT: I may make him a deeply religious person, though I don't want to use a divine caster for the character. Though since he will be LG, I do want him to be someone who tries to get his party to abide by the rules when it is proper.

I would go wizard/inquisitor. Maybe shift to MT with some full BAB...
