I can definitely see Clerics being limited to the Core gods, what with Domains and all, but what about Paladins, Druids, and Fights? The Paladin seems the next most restrictive, since the is a major alignment restriction. Druids are divine caster that are not necessarily bound to a deity. The Fight is just an example of a class that has no direct mechanical connection with the divine.

And that is the way that it works precisely.
Clerics and paladins are limited to the Core deities (and subject to normal alignment restrictions). All other characters may choose any deity they wish. But they may not benefit mechanically from their choice of deity.
That means that if you get an item on a chronicle sheet that provides a boon to worshipers of a certain deity, you cannot benefit from that boon if that deity is not Core.
You cannot ask your GM to give you a bonus to Diplomacy for dealing with worshipers of a non-Core deity just because you have a holy symbol devoted to that deity.
Etc.

This keeps coming up and was clarified in the original blog announcement thread by Mike Brock. Though its obviously hard to find in the hundreds of posts in that thread.
