I don't know what you have against a strong bipedal mount with good speed and attack that fits well with Golarion lore. There's more camels and axe beaks in Absalom as mounts than horses. Maybe you can have a camel. Though you already have the imperious Chelish cavalier attitude down pat, you should probably stick with the horse or all the other Chelish nobles would snicker behind your back.

Worgs seem like an option for small cavaliers. I mean, they accept LE riders, so they would likely work well.
Lions and tigers are probably popular too, since they are all regal and exotic. Plus they can provide after dinner entertainment using the slaves when you have a devil over. I mean, your castle has a large, complicated maze for a reason.
And now that the jokes are over- hippogriffs and griffons seem like they might also be a thing, since flying mounts can carry messages and important personnel fairly quickly. That means better efficiency of the bureaucracy.

a lion is a nice one.... king of animals, worthy for a knight with a big ego.

cheliax has major trade routes going all over the world. you could realisticly have a mount from almost any part of the world. they have a very rich upper class that loves exotic things and there is a rich and seedy underground market for things like animal fighting where you could find a mount as well. the sky is the limit when your dealing with even an ex uber expansionistic empire.
