Can I select Viking for 3 levels and then stop taking levels from that archetype and just do regular fighter afterwards?


No.


no, because an archetype replaces some of your abilities. even those you don't have yet.


You might be better off multi classing into standard fighter and barbarian.


I'm pretty sure he wants to avoid Rage.

I think his best bet is going Slayer or Brawler.


Ah. So you want the shield thing and the intimidate thing?

Well I would go with the plain fighter. The differences between a bonus to shield AC vs the benefits of armor training are not significant. Its 1 part flavor and 1 part mechanics. You should be able to use feats to get some special abilities with Intimidate.

Scarab Sages

An archetype applies to all levels, you cannot take it and then quit it.

You can multiclass into another class that is fighter-like. Viking 3/Slayer X would be more effective than what you propose, but would be legal.
