Being someone who has always enjoyed the ability to choose races from a wide variety I was curious as to how someone gains the "boon" to play as one of the additional races.
I have heard that you can only get them from playing at a convention or some such, but are there additional ways? Is Skinwalker an option "boon" race for PFS play? I'd like to know now so I don't get my hopes up and have them dashed on the shores of Absalom.

Playing at a Con will get you chances to win boons, but it takes some luck to get a race boon. GMing any games at a Con historically got you a race boon automatically, but I hear that the boon will be something else for the Con I'm at this weekend, so maybe race boons are being phased out there.
Also, if you have other boons (or spare books, etc.), check out the Boon Trading Thread in the PFS forum, and someone might be willing to trade.
Of course, there are currently 4 non-core races allowed without a boon, so you can probably find something you'd enjoy.

Certain boons for races that PFS wants kept REALLY rare, such as goblin or android are unique boons, that are sold at charity auctions at the BIG conventions, GenCon and PaizoCon. Last one I think ran over 4 figures.
Yes this means that anyone holding their breaths waiting for the android to be opened up for general play, can find something else to fixate on.

Be a PFS GM, run the modules that have the races you want to play, skip most of the tripe.
Or, find a home game and skip all the tripe.
I started GMing online specifically over this agonizing kick in the nads. Now if I have an idea for an orc scarred witch doctor that loudly argues with its fetish mask about the merits of skinning halfings alive vs dead, I have my players new BBEG or a lesser lieutenant or even ally, rather than another theory-crafted joy that I've got to put on the shelf and sigh longingly every time my gaze drifts over. Ditto for the Suli Paladin of Shelyn, or the Vivisectionist goblin that sprouts claws and fangs before waddling towards the party while screeching "HUG ME!"

Run the modules that have the races I want to play? Im not quite sure I follow you. I will be running my son and some of his friends through scenarios to introduce them to the game and progress slowly. Are you saying there are scenarios that are still available to play that carry boons to play the non-available races? If so, is this information available somewhere?

No, I'm pointing out that as a GM you effectively play as dozens of characters, the NPCs. Some of those NPCs are going to be races you have a particular interest in.
Also, unless you're actually running Pathfinder Society Organized play, you can just use PFS modules as parts of a homebrew. In fact if you're trying to get the group involved in the game and system, a homebrew will probably be far better than Pathfinder Society Organized play will ever be.
Homebrew:
"I want to be a centaur Empyreal Sorcerer."
"Okay! Let's talk about how we can make that work!"
PFS:
"I want to be a centaur Empyreal Sorcerer."
"That's not a legal race, you can't play as that."
"But I paid $35 for the Advanced Race--"
"Not legal."
"Uhh... Mermaid?"
"Nope."
"Undine?"
"Not without a boon."
"What *can* I play as then?"
"Well, we got humans, elves, dwarves--"
"Yes, but what if I don't want to look like I just walked out of a Tolkien novel?"
"..."
Which one is going to endear your son and friends to the system more?
(P.S. Sorry if I'm seeming a little aggressive. I think I'm still taking the discontinuation of tieflings rather hard.)
