Go get a Scarred Lands monster list.
The most important thing of all when talking about a monster being challenging, is to play them like a monster fighting for their life.
Ex.
There is a huge difference between a proper CR dragon that charges and just tries to pound through people with natural attacks and breath weapons, and the intelligent dragon that uses his flight and spells to shut people down and picks priority targets and knows when to cast a spell or when to focus fire.
Never underestimate a Dragon who is smart enough to cast an Antimagic Field on itself and then beats the team down because none of their magic effects him and he is still a dragon.
