Just bought the box set yesterday, and LOVE IT. The forums and FAQ have been a great resource, but there are a couple questions - and my apologies before hand. It appears that they have been answered indirectly, but I want to make certain I am not reading into things...and in truth, I may just not have found where they were simply asked outright...
First of all, in a combat with a monster that is essentially two fights (i.e. Stickfoot...and some dude whose name I forget), can you use the reveal ability on both fights? My gut says yes - cards have no memory, and these are separate checks. Same as with a summoned monster when fighting a normal one...
Second is revealed cards and damage mitigation. If something does damage before the encounter, and then say inlose the fight, if the item would handle the types of damage listed by both, could I reveal it for each? As with the above instance, my gut tells me yes...
But with exceptions if food, my gut is often wrong!

You are correct. The limit on playing cards is one card of each type per player per step of the encounter (or per check if a check happens outside of an encounter).
Each player may play no more than 1 card of each type during each step.
The encounter steps are:
Evade the card (optional).
Apply any effects that happen before the encounter, if needed.
Attempt the check.
Attempt the next check, if needed.
Apply any effects that happen after the encounter, if needed.
Resolve the encounter.
So Before the encounter is a separate step from the check to defeat. And the first check to defeat is a separate step from the second check to defeat. And any card you reveal goes right back into your hand.
Reveal: Show it from your hand then put it back in your hand.
Plus this
Cards Don’t Have Memories. Cards forget they’ve been played after they’ve done whatever they do. So if you reveal an item to reduce damage dealt before an encounter, you can reveal that item again during the encounter.
