The jackal is listed in the bestiary of this book. I want to make a hunter who is Pahmet and have the jackal as my animal companion. The stat block does not give any stats for it as a companion. And I don't see it listed on pfsrd. Is it legal, especially for society play? And if so what changes to the basic animal do I make?

Animal companions aren't made by modifying the base animal. They're made by comparing them to other Animal Companion stats and then designing something balanced with those but thematically similar to the original creature. How well that works is debatable, but the fact remains that Animal companion stats bear only a passing resemblance to those of the base creature.

But looking at the stats, I'd just use a Wolf animal companion and then fluff it as a Jackal. The stats are close enough to similar for government work, though it's a very big (eventually truly enormous) jackal, but that hardly seems a huge flaw. If you want to do the 'play dead' thing,feel free to boost Int to 3, buy ranks in Bluff, and maybe grab Skill Focus (Bluff). Grab the Precise Strike Feat on both you and it, and you'll even have a pseudo-Sneak Attack.
