So, if you're a Human MoMS, and you take this feat; do you get a +6 Dodge bonus to AC? If no, what about the net gain, a +2 Dodge bonus??

It's a Dodge bonus.
It's also a "Defensive Training" Racial feature bonus. A racial feature that I don't have.

RAW: You get nothing. An increase to a bonus you're not getting, is meaningless after all.
So ask your GM to meet you halfway.

If it just said "your Defensive Training bonus to AC increase to +6", it wouldn't even be a question. But the fact it is a Dodge Bonus confuses me. Dodge bonuses stack with everything. Even other Dodge bonuses.

It's because the bonus given by the Defensive Training racial trait is a dodge bonus, normally +4 vs a specific Humanoid type for Lesser Defense Training (1 RP) or +2 general dodge bonus vs anything for Greater Defense Training (4 RP). You need the racial trait, somehow, in order to gain the bonus. Another way of looking at it is this; if you picked Mantis Style, which gives 1 additional use per day of Stunning Fist, but you don't have the Stunning Fist feat, how many times per day can you use Stunning Fist?
