How much do they sleep with? Completely up to them.
How much can they sleep with? Pretty much everything.
How much would I have my character sleep in? Well given that the game doesn't have a discomfort mechanic outside of armor I'd say all of it.
If we were being realistic though probably rings are on and maybe amulets, possibly a body/chest slot depending on the item would be worn as a nightshirt of sorts, headbands are probably on, belts would probably be a no although because of the rules I would never remove it so I'd say that's a yes, boots are off probably, gloves are probably off but that's a maybe, bracers are probably off, eyes are almost certainly off. Light armor might be on depending on how militant/wary the character is.

Why not sleep with your rings, belts, and gloves? Capes and cloaks are a maybe, but usually a yes. Boots a no because fungus. Amulets, circlets, helmets, armor higher than light, metal bracers, weapons, or anything bulky/sharp would be a no because of comfort reasons.
I base what my character would wear to sleep on what I would wear to sleep and what I see hobos wearing when they sleep. Maybe some characters would be more willing to sacrifice comfort for protection.

I would say, unless you are fighter, otherwise you will get fatigued if you sleep with things like helmet and circlets. And without Endurance feat, can't sleep in medium armor without getting fatigued. And only rogue allow to sleep with daggers concealed on them. But that's how I would rule it. If you sleep with your weapons, you will get stabbed unless you sleep with medium or heavy armor.

Aside from enforcing the "medium/heavy armor leaves you fatigued" rule (and ruling that the gambeson that is worn under certain armor counts as padded armor and can be slept in - hey, +1 AC is better than nothing) I usually assume the characters are fully girded up when they're encamped in wild country.
The situations where I tend to ask "What are you wearing continuously?" tend to be situations where a sane person would not assume their life was in perpetual danger. In your room at an inn. Taking a bath in a secure location. Stranded for weeks on an uninhabited tropical island.
