Hello,
I currently have a level 6 musket master, and am thinking of changing classes. Now I was thinking of going straight wizard for one level, with the school of conjuration. At which point I could use the spell abundant ammunition.
Now let's say during a skirmish, I used 5 alchemist cartridges and greater burrowing bullet. Now according to the spell:
When casting on a container such as a quiver or a pouch that contains non magical ammunition at the start of the round, will replace all ammunition taken and used from the container the previous round.
Would that replace the ammunition permanently, for a period of time, or is this even a legal idea?

So becoming a level 1 wizard due I treat it like a level one character?
Being human do I get that extra feat again?

Welcome to the Game! Don't worry about being confused, it happens to all of us.
There is a difference between character level, and class level. Your character level is the combination of all your class levels. So a 2nd level Gunslinger/ 1st level wizard is a 3rd level character, and thus, you do not gain 1st level character benefits. You gain the 1st level class benefits of whatever class you're going into.
In the beginning of the class chapter, right before the Barbarian class, you'll find the Level Dependent Table. It's the one that shows you the XP needed for the next level as well as character level dependent features.

These are both fairly complex classes to be a first character, but with that in mind I should point out that your familiar won't be able to deliver your touch spells until you get 3 levels of wizard or you take boon companion. You can cast it on your own from the get go, but losing a standard action at the start of every combat kind of stinks, especially for a dedicated damage dealer.

EDIT Important Note: I didn't know what a burrowing bullet was until just now. I looked it up and saw that it is magical. Abundant Ammunition works on non-magical bullets. Cartridges are good, silver bullets are good, adamantine bullets are good, etc, but magic bullets are not replicated unless the magic was put on them after you cast AA.

Example of how this spell works. Any non magical ammunition is going to return to you for the duration of the spell, and they come back on your next round.
Let's say I have the ability to shoot 4 arrows, and I have 3. Abundant ammunition is happening, and you make your attacks, and on the 4th attack you ran out of arrows and can't fire anymore. On your next turn your ammunition returns to you, and it's preeminent even if the spell goes away. When the spell stops is when your ammo doesn't return, and is used up forever.
If you get expensive ammunition, I suggest you abuse it with abundant ammunition, because it's wonderful.

Abundant Ammunition does not return ammunition. It creates new ammunition. Nonmagical properties of existing ammunition (masterwork, special material, alchemical) can be made. Magical ammunition cannot. However, If a magical spell is then placed on the ammunition, all created ammunition gains the spell's effects./cevah

Come back shouldn't be interpreted that they return to you in the condition they last left off, so I apologize if that's what was gotten from it.
Ammunition is replaced, and the ammunition you used vanishes. I figure that it's pretty much the same exact ammunition being returned into whatever holds your ammunition, but if you want to figure it's brand new stuff, then go right ahead.
