I'm a little confused on how to calculate the cost on this one.
I assume that the bow has to be a minimum of +1 first...so, that's 2000 GP (+ weapon base costs). So, to make it Adaptive, is it just the cost noted in the UE table of +1000 GP? Or, does it have to have another +1 enhancement cost added so that it's an additional +1000+6000 GP (to the already 2000+ GP cost)?

No. A flat +gold piece cost is exactly that and nothing more. It is not a '+' equivalent power. Anything that has a simple GP cost can be added to a magic weapon at the GP cost and no other modifier.
So your +1 Adaptive bow, if you want to add any more powers that are '+' rated would do so as a +1 weapon to start. The Adaptive power simply costs 1000 GP and in no way affects further enchanting costs.

I've seen other weapon qualities in the +2 and later tables though with only a GP price (like Transformative and Dueling). What does that mean?
Same thing - it's just that amount of gold to add that ability.
As for why they are on those tables (when the amount of gold is still far less than those abilities would cost) is just an editing choice I imagine.

they are flat cost only just like adaptive as i stated above, they are in those tables to reflect random location when rolling random treasure. if you look at cost vs cost of adaptive and those other props, you will see the price is much higher in the flat cost, so they are placed in the +2 table to reflect that difference when determine random loot.

They are listed in those tables because their GP value is roughly simliar to other powers in that table so when making random weapons as treasure you will have value appropriate powers being generated.
As has been said above multiple times, a flat +GP power is that and nothing more, no matter where on the table it is listed.

Has to be Masterwork to enchant it at all. (which can be done with the Masterwork transformation spell, the materials of which are = to the cost of the masterwork add on for weapons 300g and for armor 150g)
One of the best things for a Str based character in PFS is a MW Composite Darkwood Longbow (Str+3). Which comes in at 730g, just under the limit for a 2 PP purchase btw.
